Pan Fried Lemon Sole with Caper Beurre Noisette and Jersey Royal Potatoes

Deddington Arms

Lemon Sole and Crab Soufflé with Tomato Butter Sauce, Baby Potatoes and Vegetables

Villiers

Paupiettes of Lemon Sole, Samphire, Clams, Wild Mushrooms and Beurre Blanc

The White Hart

Poached Lemon Sole Fillet Rolls Filled with Asparagus, set on Creamed Potatoes and a Dill Cream

For April’s wine of the month we have Los Vilos Sauvignon Blanc, from the Valle Central of Chile. This is a dry white wine, with the usual complexity and style expected of Sauvignon Blanc grape. With just a hint of the Semillon Grape added, this gives the wine a fruity bouquet and good balance.
